How difficult would it be to translate Dragon Fist's martial arts maneuvers into 3rd/3.5?

Should I even try to translate Dragon Fists maneuvers or just use the maneuvers from Tome of Battle?

Looking at the maneuvers, they broadly speaking seem to replicate the class features of Monks and similar low-level-ish martial stuff. There's nothing particularly powerful even at the highest end. Most of them aren't really maneuvers so much as quasi-feats that give persistent and low-level bonuses.

Translating these into martial maneuvers wouldn't be that hard for most of them, but Tome of Battle's system seems to me to be more versatile and mechanically more powerful than this. Unarmed combat is contemplated by Tome of Battle since unarmed strikes still require melee attack rolls. Also look up the variant rules for Unarmed Swordsages in the same book.

Considering that the original Dragon Fist every class access to the martial arts maneuvers what would be the best to do the same with the core classes with the stuff from ToB?

That's a different exercise. We're not comparing apples with apples because the Dragon Fist maneuvers are not as powerful a set of techniques as martial maneuvers would be.

The quickest, dirtiest way to allow widespread ToB maneuver use for core classes is to outright replace Fighter with Warblade, Monk with Swordsage, and Paladin with Crusader.

If that doesn't appeal, just go with the normal rules: unless you're a Warblade, Swordsage, or Crusader, or taking levels in one of them, other classes get access via the Martial Maneuver and Martial Stance feats in Tome of Battle.
