What would be the deity with the best boons for an evangelist Witch that will go in melee?

Need a bit more - how do you plan to melee? Gish with weapon? Which one? Or are you thinking shapeshifting/Natural Attacks? Martial Arts? Or something nonstandard like your hair?

I'd advise against the shield - you'll need to spend build resources to get proficiency, and it also occupies one of your hands which will mess with your ability to cast spells.

If you're set on that concept though, there is a patron you might find amusing - the demon lord Angazhan (https://pathfinderwiki.com/wiki/Angazhan), essentially an ape demon. He makes your feet prehensile, giving you a climb speed by grasping things with your feet (works even if you're wearing magical shoes) and more importantly, you can use your feet to perform somatic components, thus allowing you to keep both hands occupied with the sword and board.

His favored weapon is a spear so no help there, you'll have to pick up the sword and shield elsewhere.
