I heard it is possible to get your AC as low as -2 (not sure if that includes magic items or debuffs cast on you included.

I don't think the mechanics were intended to have NEGATIVE AC, but does that mean that rolls pretty much automatically hit, even in disadvantage?

Are there any other unusual or unintended effects that might come from this when combined with other effects?

A natural 1 on an attack roll would still miss. You can get a similar situation on someone with, say, an AC of 10 against an enemy with +11 or higher on their attack roll, so it's not just a negative AC thing.

There was a reddit thread that tried to create the weakest character possible and got like 2 AC and abysmal HP but I can't find it. The guy had done a good job, if he couldn't get it lower I don't think it's possible. ^^

You may also want to take a look at this conversation (https://rpg.stackexchange.com/questions/150742/what-is-the-lowest-possible-ac), too. Someone managed to get their AC to -7, though they had to use a few artifacts to get there.
