The "replace your stat" items don't sit well with me. Their "best" use is using them as a crutch for a player; like, a low-intelligence player using the headband of intellect as a core part of their build.

This is an attempt to keep them thematically similar, but no longer replace your stat.

Gauntlets of Ogre Power: You have advantage on Brawn(athletics) checks that use your hands or arms effectively. The Gauntlets strengthen your hands and arms, making large and heavy weapons easier to use. When using a versatile melee weapon in one hand, use its two-handed weapon damage. You can wield a two-handed melee weapon in one hand, but if you do so it doesn't count as HEAVY or two-handed. When you do use a two handed or versatile melee weapon in both hands, you gain an additional +1 bonus to hit and damage.

Belt of Giant Strength: Your carrying capacity doubles. Each Belt of Giant strength has a Brawn bonus die. You add this Brawn bonus die to Strength attribute checks, damage on Strength-based weapon attacks, and on Strength saving throws.

Belt of Hill Giant Strength: The Brawn bonus die is 1d4.

Belt of Stone Giant Strength: The Brawn Bonus die is 1d6, and as an action, can throw a stone of up to 3 pounds as a thrown weapon; these do 1d12 damage per pound and have a 50/500' range.

Belt of Frost Giant Strength: The Brawn Bonus die is 1d6, and you are immune to cold damage and resistant to fire damage.

Belt of Fire Giant Strength: The Brawn Bonus die is 1d8, and you are immune to fire damage and resistant to cold damage.

Belt of Cloud Giant Strength: The Brawn Bonus die is 1d10, and you can cast Fog Cloud without expending a spell slot. As an action, or as a reaction when you suffer damage, you can cast Gaseous Form on yourself without requiring concentration or any components; it has a duration of 1 minute, and you can do this once before completing a short rest. You can end the Gaseous Form as a bonus action. Casting Gaseous Form as a reaction this way gives you resistance against the triggering damage.

Belt of Storm Giant Strength: The Brawn Bonus die is 1d12, and you are immune to lighting damage, resistant to thunder damage and can breathe underwater. If you roll a critical hit on a weapon attack, or suffer a critical hit, as a reaction you can hurl a lightning bolt at a point you can see within 500 feet. Each creature within 10 feet of the lightning bolt impact location must make a DC 17 dexterity saving throw, taking 54 (12d8) lightning damage on a failed save, or half as much on a successful one. You can do this once before completing a short rest.

Headband of Intellect: You gain a Brains Bonus die of 1d6. You can add this Brain bonus die to Intelligence attribute checks, Intelligence saving throws, and once per turn to damage when making an Intelligence based spell attack.

Amulet of Health: You gain a Toughness Bonus die of 1d6. You can add this Toughness bonus die to Constitution attribute checks, Constitution saving throws, and when you take damage you can roll it and reduce the damage you take by its value. Once you have reduced damage this way, you cannot do it again until the start of your next turn.
