Dwarven Defenders get winded after their defensive stance ends. Is there anything else anywhere else that mentions either getting winded or alleviating the winded condition?

I don't think it's a specific condition, just an adjective describing a character in that situation. The effect is an ability penalty, which goes away when the condition causing it goes away (in this particular case, when the encounter ends).
