Can you see force magic? Like is Eldritch Blast or other force damage dealing spells visible like lighting or fire, or is it invisible like thunder?

The spell description will usually tell you. Magic Missile explicitly glows. Eldritch Blast is a crackling beam. So both should be visible.

Wall of Force and Forcecage meanwhile are explicitly invisible. (Note that "invisible" does not always mean "cannot be perceived" in 5e.)

This is correct. Each spell/effect describes if this specific instance of force effect is visible or not.

You can see an artistic rendering of force spells in PHB with the guy throwing magic missile in front of the spell lists, and in TCoE with the farmer shooting chickens.

Warning - the chicken shooter is impossible to un-see. People who are easily traumatized by the sight of chicken magic strongly cautioned.
