Aloha friends!

I love me some beholders, so here we go:

Singufaxet-
This Beholder is a crystal ball through which a beholderlike entity from the far realm can be seen. The orb floats and a number of adamantine plates orbit it. The plates are quadrangles shaped like arrow heads and each has a slightly different tinge. The exterior of these plates is rough but the interior side is polished to a mirror finish. Singufaxet's primary orb generates a 120 ft cone of Reverse Gravity. It assumes positions to create wide circles, long ellipticals, and others with its eye. No matter how it's oriented, creatures in the field always fall "up" relative to normal gravity (ie not towards the beholder).

Having no eyestalks it's other magical abilities are created by reflecting its primary eye's gaze from plate to plate. These powers are varied, from a volley of potent eldritch blasts to a disintegration ray. It can alter molecular cohesion superheating objects, create a streak of radiant energy and various effects that warp space.

It can also reflexively organize its plates to form pair of interlocking jaws (this is its bite as normal) or surround itself in a nearly impenetrable decahedron (As Shield Recharge 5-6).

Bee-Holder
The party hunts a mad druid through a forest overrun with giant insects, deadly swarms, and undead animated by such swarms consuming the bodies from the inside out.

As they face a small size "giant bee" they see its stinger shoots a spell effect. It escapes when they "defeat it." Finding the druid's grove they see they have wildshaped into a grotesque queen be, too fat to fly on her own, that hangs out of a large beehive. The hive has protrusions like a wasp's nest connected to a various places and 8 of the "giant bees" alight on the protrusions to carry the hive around. The "main eye" creates a 120 ft cone of Insect Plague, the bees on carrying it around fire an assortment of effects from their stingers.

The stingers can be harvested as 1/day wands afterward. 3d10 doses of superior honey can be harvested which function like potions of Charm and a day's rations. 2d6 doses of Royal Jelly which has potent healing properties can also be harvested which serve as a Potion of Healing, Superior and a day's rations. The DM should keep track of how many total HP a character recovers from Royal Jelly. If the combined HP regained from Royal Jelly ever equals or exceeds a creature's max hp, they are cursed and begin to transform into a Giant Wasp over the next 2d10 days. Remove Curse allows the character to make a DC 18 Charisma save to fight off the transformation but only if the character is in a Hallowed area or Paralyzed with Giant Spider Poison and cocooned with one's webbing or in the area of a Web spell.

Psygotezia the Being-Holder
Psygotezia is a freakish parasitic Beholder. Its main body is about the size of a basketball with a grotesquely distending jaw and terrifying teeth. This body will settle on the neck stump of a recently decapitated creature of small, medium or large size (usually consumed by the beholder). It will then reinvigorate the body giving it the strength of an ogre. Psygotezia will then use its eye rays and physical power to infect other creatures, usually humanoids, with its eyestalks. Its main eye creates an area that alters recent memories, often allowing its victims to forget their attack.
The eyestalk will take root in one of the creature's eye sockets, consuming the eye and infecting the brain. It can collapse into the creature's socket seeming no more noteworth thatn an oddly colored eye.
Psygotezia can see through this eye and communicate telepathically with the infected. It usually waits until the victim engages in some untoward behavior it can leverage knowledge of or threaten the family it sees through its displaced eye. It can extrude the eye and blast whichever eyebeam that stalk is responsible for at any time. It can also allow the infected to use the eye's power as well as its truesight and darkvision.
If an infected dies, the eye stalk will wither to a near dead state, dumping foul moisture and seeming to become inert. When it is no longer in danger it will reanimate, slithering 5ft per round back toward the main body. In this state Psygotezia cannot see through it though it can sense its rough direction and distance. When it reattaches to the main body it reattaches as an action and regains full functionality.

Psygotezia automatically regenerates destroyed eyestalks after 2d4 long rests.


HP- Psygotezia has 2 HP pools. When the first reaches 0 and threats are still present, it will detach from the body and flee. It has full hp in this more limited form. Vorpal weapons etc immediately reduce the first pool to 0. If threats are not present it will Revivify the body and retreat.

Strength of Madness- Psygotezia's bodies have a strength score of 18 unless the original creature's score was higher.

Muscle Memory- Psygotezia can acquire the following features if the body it controls had them:
Weapon and Armor Proficiencies
Action Surge
Rage
Enhanced Movement
Sneak Attack
Evasion
Martial Arts
Unarmored Defense

Psygotezia's bite- if the bite reduces a creature to 0 hp, the creature's head is bitten clean off and destroyed. Psygotezia can Revivify any body it has taken control of 1/day.

Main Eye- Modify Memory 120, Creatures that start their turn in the area must succeed on a save or forget what has transpired in the last 3 minutes. If Psygotezia is still visible, allies are present and engaged etc, the target rolls a new initiative and can act normally. If allies are incapacitated or psygotezia has hidden or departed, the target can make an Investigation check vs beholder's spell dc. On a fail it believes some narrative the Beholder implanted.

Various pyschic spells, Tasha's Mind Whip and Dream are big ones, Bane, Charm, Dominate Beast, Person, etc. and a few others.
