Best level spread for tortle way of astral self monk/barb path of beast

So have read up on this one a bit but not sure which is best 3 levels monk rest barb or 3 barb rest monk, if mainly monk you only get very few rages that recharge at long rest, but gain much more use of flurry of blows plus, a bigger unarmed dice a capstone of an extra attack when awakening all astral parts, if other way around you get max amount brutal critical, more and stronger rage damage, more hp, only 3 uses of flurry of blows but they recharge on short rests, also gain infectious fury and call of the hunt.

Both seems quite fun for a feral tortoise out for blood but not sure which one is better.

Edit: given some thought if going mainly barb, prob kensei for agile parry AC is better since just arms of the astral self aint that good.
