Omnitaurs look like… Well, screw that. There's a picture, you take a look yourself.

Omnitaurs understand Dvati and Windsong but do not speak.

It attacks. It pukes. It makes people question their own sanity.

Breath Weapon (Ex)
The breath weapon of an omnitaur is a 20-foot line of thin slime, usable once every 7d2 rounds. A creature hit by this secretion must succeed on a DC 19 Fort save or become sickened for 3d4 rounds. The save DC is Constitution-based.

Inconceivable (Ex)
Omnitaurs look weird, so much so that any creature barring other omnitaurs that encounters them must succeed on a DC 23 Will save or fail to believe that the omnitaur is real. In combat, an omnitaur gains a surprise round against all such opponents. The save DC is Constitution-based and includes a +4 racial modifier.

Keener Scent (Ex)
Omnitaurs possess the Scent special ability and they automatically detect fresh blood spilled within 350 feet of them.

Poison (Ex)
Injury, Fortitude DC 19, initial damage 1d4+3 Int, secondary effect: the target becomes confused for 1d3+4 rounds. The save DC is Constitution-based.

Poor Man's Pounce (Ex)
If an omnitaur charges a foe, it can make a full attack – as long as it doesn't try to charge too fast. An omnitaur that attempts to pounce on a foe must move no faster than half of its land doubled speed or succeed on a DC 17 Ref save to avoid falling prone and losing the action.

Skills
An omnitaur has a +8 racial bonus on any Swim check to perform some special action or avoid a hazard. It can always choose to take 10 on a Swim check, even if distracted or endangered. It can use the run action while swimming, provided it swims in a straight line.

Okay, this is fantastic.

However, I can't not be bothered by it having only 1 feat. It's not mindless, and even if it was, it isn't listed as a bonus feat. Where are the feats?

Also, this isn't really CR 8, IMHO.

Also, this isn't really CR 8, IMHO.

I'm pretty sure your humble opinion is very correct as well. I'm (admittedly) not really good at calculating CR and assigning LA. I ran this through Vorpal Tribble's formula and got a 7.8 or somesuch (hence the 8), but an expert opinion would be really welcome.

Because of the hind paws? I don't know. I'm not saying it wouldn't make sense, but rake is kind of boring.

If the alt-text is to be taken into account, I would add the ability to produce offspring that are full members of one of the component species (a normal shark, a normal bull, etc.), and some note as to what conditions produce component species offspring and which produce Omnitaur offspring. (And maybe a boost to that save to believe they exist, if you happen to be a component offspring - since you’d have grown up around one.)

Hm. Reproduction is really not a thing I'd like to create rules for. How about a racial feat instead? Say, something like this:

Vile Spawn of the Omnitaur [Heritage]
Despite not looking the part, you are, in fact, the lucky progeny of two omnitaurs. Their hideous kind cannot faze you for a moment.
Prerequisite: Bird (any), human, raptoran, goatfolk, leopard, anthropomorphic leopard, kobold, dragon, half-dragon, bison, minotaur, fish (any), anthropomorphic shark, carp hengeyokai, snake (any), anthropomorphic snake (any), lion, anthropomorphic lion, horse (any), anthropomorphic horse (any), centaur, hippocampus, griffon, hippogriff, merfolk, satyr, faun, mongrelfolk, wemic, criosphinx, hieracosphinx or seacat.
Benefit: You are immune to the effects of an omnitaur's Inconceivable special ability and gain a +5 insight bonus on Fort saves made against its poison.
Special: Unlike most feats, this feat must be taken at 1st level, during character creation.

Done! Keep them coming if inspiration strikes! I'll add wemic too, while at it. (Hm. Would bariaur be a stretch?)

Edit: Added criosphinx and hieracosphinx to the mix.
