1: "The creature remains frightened while it can see the target or is within 60 feet of it....
If the creature moves more than 60 feet from the target and can't see it, the creature is no longer frightened, but the creature becomes frightened again if it regains sight of the target or moves within 60 feet of it....
Ending the Effect. If an affected creature ends its turn while not within 60 feet of the target or able to see it, the creature makes a Wisdom saving throw."

Does this mean that the creature must be beyond 60 feet, AND unable to see the target, at the end of its turn in order to roll a save?

2: Is closing its eyes sufficient to be considered unable to see it?

3: Although creatures are considered to be paying attention in all directions in combat, closing one's eyes is a thing (e.g. fighting Medusas). Can a creature just declare that they're facing away from the source of the fear?

4: Suppose I target Gilbert the Goblin with an aura of Antipathy:Goblins, making him the centre of the aura. Is he afraid of himself?

That makes sense.

2: Is closing its eyes sufficient to be considered unable to see it?

Is it the Ravenous Bugblatter Beast of Traal? I would say no. There's no hard rule about averting your gaze from something and the consequences are different for different things, but they all imply that you still know that it's there which seems to be the most relevant thing for Antipathy.

60' away and at least in total cover seems to be the intent.

3: Although creatures are considered to be paying attention in all directions in combat, closing one's eyes is a thing (e.g. fighting Medusas). Can a creature just declare that they're facing away from the source of the fear?

No. "Paying attention in all directions" implies you count as "seeing" things behind you. Averting your eyes from things that have that in their rules has situational effects for what it means for that thing and there aren't any in the Antipathy rules.

4: Suppose I target Gilbert the Goblin with an aura of Antipathy:Goblins, making him the centre of the aura. Is he afraid of himself?

Since Gilbert cannot attempt to get 60' away from himself, being afraid of himself does not seem relevant and if all you want him to do is sit down and cry you probably have spells lower than 8th that will get you there.
