Thinking of how to make fighting styles more powerful, at least for "plain" fighters (i.e. Champions).

How about this? When a Champion chooses that archetype, s/he also gets a free feat based on the fighting style previously chosen:

Interception, Protection or Defense: Heavy Armor Master
Great Weapon Fighting: Great Weapon Fighter or Polearm Master
Dualing: Shield Master or Defensive Dualist
Archery or Thrown Weapon: Sharpshooter or Crossbow Expert
Two-Weapon Fighting: Dual Wielder

Again, this would Only be for the Champion fighter archetype.

Any thoughts/ impressions/ recommendations?

I’d like it if they upgraded the mastery properties of weapons.

Not sure how, but example:
GW Fighting: add 1/2 prof to graze damage, Topple saves are made at disadvantage.

Twf- Nick-make off hand attack with advantage,

Dueling- reduce speed by 15 instead of 10 etc.

This seems like a great idea. I was actually thinking of doing something similar. If you decide to actually make something like this, I would look at the Crusher, Slasher, and Piercer feats from tasha's.

I like this idea.

For Interception, could Sentinel be a good fit instead?
