So, I was looking into ways to get immortality and saw that the type change methods (prcs) listed dont say you stop aging....

however, things like becoming an undead (necropolitan) are assumed to not age (what is already dead cannot die?)

thing is, undead type doesnt say it doesnt have a 'lifespan' anywhere.... so why are so many saying things like the elemental savant prc turning you into an elemental doesnt give you immortality?

How is becoming a dirt flesh man any different from being a dead flesh man?

It's because the rules are an exceptions based system. Unless something says otherwise you maintain the status quo. So if it just says your type changes to an element, you only change what that entails. Type =/= in all ways the same. For example animals can't have int higher than 2, but if you polymorph into one that isn't the case.

Who said so?
Elementals are canonically immortal (they just get bigger and more powerful with age - kinda like Dragons - that's why two most powerful variants are called Elder and Primal)
After all, Golems are powered by imprisoned Elementals - and no Golem ever broke down because of its Elemental ran out of lifespan

It's OK to say Aberrations, Fey, or Outsiders aren't immortal by default - because there are creatures of those types who're known to don't live forever; but which Elemental ever died from old age?

Are Genasi elemental? Or some other type?

Usually, Outsiders - and, moreover, Native (https://www.d20srd.org/srd/typesSubtypes.htm#nativeSubtype) Outsiders
(Lesser Genasi are Humanoids)
