I'm looking for a spell that would knock-out (ie. not kill) a party of level 5-7 characters fairly reliably for the purposes of plot. Any ideas?

Depending on the level of the caster Mass Hold Person or (un)holy Word could do it.

What are the parameters?

How long do they need to be out? Do you mean unconscious or just unable to fight back?

Any damage dealing spell modified with the Subdual Substitution (http://www.d20srd.org/srd/divine/divineAbilitiesFeats.htm#subdualSubstitution) metamagic feat works also. Hmmm ... Meteor Swarm !

Overwhelm could work. PHB2. Level 6 spell though and only single target.

Anyway, Overwhelm is good-save or take nonlethal equal to HP+10.

Telekinesis is a fairly good bet as well-telekinetically hurling 3 darts with drow poison per party member means 3 dc 15 fort saves. Any one failure means sleep

Sequester or Resilient Sphere (followed by Darkness/Silence for privacy) if you just need them unable to touch you for a while.

I used Symbol of Stunning for a similar plot device, but I wanted the characters to be witnesses.

If you'd prefer something that you could reliably apply to multiple spells...use Born of the Three Thunders combined with a race or template that renders you immune to its drawback.
