For D&D, not much beats the good old Mad Irishman (http://www.mad-irishman.net/pubs/MI_DnDCharForm21.pdf) and his fantastic character sheet.

I hope people don't mind if I tag this on to a one-question thread, but I would really like to find a good character sheet for 3.0 which can cope with levelling up and magic items.

I generally just use a text editor. My character sheets tend to come out looking like Monster Manual entries, although they have a lot of notes at the bottom that spell out all calculations.

Hero Forge may be more than what you are asking for. It is, however, a great Excel file that can generate most sheets that you could want.

If you do some hunting you can find the 3.0 version out there.

I believe The Tangled Web (http://www.thetangledweb.net) has a 3.0 version.
