I know that ooblick liquids get harder with more pressure that is applied but, is there a fracture point (the point at which the crystalline structure shatters)to it?

Yep. If you hit it hard enough with a hammer, it will shatter. (Then it will melt back together.) Another way to make it break is to throw it at a wall, but that makes a mess.

Oh, and the correct spelling is "Oobleck."
