Good Humanoids to Alter Self Into
Say you are a human with alter self as a spell or SLA. You can turn into any humanoid of up to 5HD. Looking at the SRD there aren't many good options. Raptoran comes to mind as a flying humanoid, but that's about it.

Trogdolyte has +6 Natural Armor. Avariel [Races of Faerun] is a solid flyer option. Merfolk/Aquatic Elf/whatever gives you Swim-speed. Crucian [Miniatures Handbook] has +8 Natural Armor and wins that category. Asabi [Monster of Faerun] has a burrow-speed which could be very useful.
