Lords of Madness states that they find different varieties of brains delicious based on the owner's personality. Duergar, with their insane egotism, are highly sought delicacies. I would imagine they would eat a crazy person's brain. That, or use those weird emotion resonator things to project feelings of satisfaction and serenity into themselves.

I always fancied the idea that they just find some sentient 'shrooms and bond with them telepathically or something.
Or they could snort some kind of psi-crystals, I dunno. Getting wasted seems so very tame when you could expand your consciousness with weird psionic powers. Best trip ever.

Ah a cleric's brain, a fine hearty breakfast, nice and nutritious and filled with the energy needed to wake up and go.
A wizard's brain sweet and mouth watery, a dessert and treat hard won.
The fighter's brain, rather bland, but nicely spiced with courage.
The crazed gnome's brain it'll make you see colors.
But the orcs brain? It noxious odor be a warning, it's taste is foul and vile, to twist the stomach. To that we say no.

LoM states that they can eat and drink other things than brains and require them for normal nutrients, the living brain just gives them the mental power they cannot otherwise produce themselves. They also enjoy the thoughts and feelings in living brains, so don't take the other available sources of mental energy that are open to them (such as absorbing latent psionic mental energy through psionics).

Anyway, I'm pretty sure they can drink alcohol if they want to.
