is there a consolidated list of variant classes from the non core books somewhere? prefereably with a short description of each

Yeah, this is likely to be the closest you're going to find. But it doesn't have everything (nothing psionic, for example), and it tends to spell out full details instead of listing short summaries.

I'm not criticizing it, as I use it a lot, but I don't understand why crystal keep is legal. Is it because it only summarises and paraphrases rules?

The CrystalKeep list is actually a mix of things, with both class variants and ACFs (Alternative Class Features), which they list as "Variant Class Features". For a better list of ACFs you should also check out the Wizards.com Alternative Class Features thread.
