... if you have a 50 ft long 10ft by 10ft dungeon corridor and you cast web will it create layers of web over 20 ft of that corridor?

20ft radius spread implies anywhere within a sphere with 20ft radius will be webbed. the 50'x10'x10' corridor will, if well-targeted, have 40'x10'x10' of web covering it.
