Im pretty sure I get this and am just over complicating it but...

So it says it doubles a spells duration. That means a spell with a duration of 1 minute/level, now has a duration of 2 minutes/level. Right?

I like using Extend with spells with a set suration, like Ice Storm.

I prefer to use them while binding extraplanar creatures, Such as pit fiends and other devils/demons. If you assign an open ended task such as "invisibly accompany me wherever I go and serve me to the best of your ability" you can extend the spell to get them to serve you for twice as long.
