Non-core NPC classes...
...or at least stuff that's near enough.
Obviously the Fighter is an NPC class (with the Warrior being renamed the New Recruit/Cadet/Conscript), and there is the wonderful Power Classes Hedge Wizard (PDF)
Any others?

Yep Eberron Campaign Setting.
And I don't know about other official NPC classes; but on the homebrew font, there is Keith Baker Gleaner (look under Gaming link) which is a druidic adept, and I believe M-Bark (a poster here) have made someNPC only classes,
