    Default Important crafting/profession skills? (3.5)

I'm playing in a campaign where we've gotten a stronghold and followers. The followers will not be joining the party on any outings and will primarily hang out around the stronghold.

As the thread title suggests, I'm looking at what craft skills my followers should take. So far I have thought of:

    Crafts:
    Leather working
    Masonry
Construct (This and sculpting might be the same skill.)
    Sculpting
    Mechanics
    Siege Engine
    Bow making
    Armorsmithing
    Weaponsmithing
Blacksmithing (Would this be considered metal smithing?)
    Alchemy
Painting (I.E. Portraits and other artwork)
    Locksmith
    Carpentry
Farming (Or would this be better as a profession?)

    Professions:
    Sailor
    Chef
    Butler
    Scribe
    Lawyer
    Shopkeep
    Healer (heal skill instead, probably)
    Accountant

    Knowledge:
    Geography
    History
    Local
    Architecture and Engineering

So with the understanding that Craft is a skill if an item is created and profession is the skill for anything that doesn't result in a material good, what craft/profession skills would be important for a fortress to be mostly self-sustaining?

Basket weaving... Painting can be incredible.

Isn't armor and weapons covered under craft arms & armor?

Boyer Fletcher is broken with the Boyer's knife since now you have an army of well equipped but untalented archers. If they are elves, now they are talented.
