Also, are you sure this is Sauron's head? I thought it was one of the Witch King's empty helmets. Sauron's head would probably look pretty similar to the one of the Balrog, only bigger (after all, both of them are Maia).

Sauron is described in a number of ways. Most of the time, he's described as humanoid. In his old Annatar form he is a beautiful man-shaped creature, and during the finale of the War of the Last Alliance, where the ring is famously cut from his hands, he is a towering creature able to hurl men away by the dozen (Akin to the Witch King, actually). However, we don't know what he looks like then, because he wears plate armour.

The safest bet is a human-esque being of considerable beauty and nearly unparalleled malevolence.
