I'm going to completely ignore this whole argument here (Which so far seems to be mostly simulationist vs. gamist) and address the OP.

Why do you need an AC of 16? For a caster, that isn't just decent, that's very good, especially without using spells. As far as I can tell, only clerics and bards can get to that point, but land druids are more like wizards.

Wizard: AC of 10+dex, or 13+dex if you cast mage armor in the morning.
Land druid: AC of 11+dex, or 13+dex from starting equipment, without or with a shield respectively. For studded leather add 1 to that.

What this means is that if you have a shield and can get studded leather (or in this case, hide will also work), all you need for 16 AC is +2 to dexterity. If you have studded leather and +3 dex you can get AC 17 pretty quickly.

In other words, the inability to wear metal armor is pretty relevant, especially since land druids, again, are back-row casters.

Multiclass into rouge and get insane movement options from cunning action, expertise in one of your skills and take it to level three and gain the shield spell from Arcaine trickster.

I use shield as a reaction all the time. Add the resilient feat on your dex mode for the dex boost to AC and become proficient with dex saves.

That's my build and it keeps me alive.
