    Which books can you use?
    Ability scores?

Is this a character for a game or are you just looking for a min/maxing lab experiment?

well for a start you can have a lot of fun with metamorphis and a 0-lv asimar, since it will allow you to take the shape of a 10 HD outsider, splash in a lv of monk with the carmendine feat, and you can ad your int modifier to your ac.

this should give you a good basic ac, afterwards have fun with powers like inertial armor and precognition.

another option is monk1/druid9, with the VoP feats, this also allows for a decent ac in animal shapes.

well in that case the first build wont suffer, and in the second build you just have to think a bit about how to get your gear on in whatever wildshape you happens to occupy.

Behold the Drunken Defender. (You'll need to adapt it of course)

    Definitely my favorite AC build.

Mineral Warrior: +3 Natural Armor, a weird smite, Darkvision, DR 8/adamantine, +2 Str, +4 Con, -2 Int (minimum 1), -2 Wis, -2 Cha. +1 LA. Generally considered a broken template.

    Frozen Dwarf Hulk Smash!!!

Inertial Armor: Best armor in the game, since it scales so well with manifester levels, has no max dex bonus, has no Armor Check penalty, is a Force effect, and allows you to stack any other bonus (shields, Monk, Fist of the Forest, etc) that's not an armor bonus on top of it.

FYI, once you get to AC 40ish, you generally want to diversify your defenses rather than pursuing the diminishing returns of raising your AC higher. Damage Reduction, Ring of Blinking, Cloak of Displacement, Greater Invisibility, High Saves, Evasion, Mettle, Spell Resistance, Fly, and the most important defense of all, high Con/hit points.
