Vaarsuvius was focused on the means, not the end. The goal was ostensibly to reunite the Order, but at their most sane on the subject, Vaarsuvius was already looking at it as "I will accomplish the goal with MY MAGIC!" not, "I will accomplish THE GOAL with my magic!" When people who were part of the defined goal questioned the supremacy of Vaarsuvius' magic and the moral and logical viability of dealing with everything by casting a spell at it, they got sheared off in a display of "destroy the village in order to save it," because what truly mattered to Vaarsuvius was not "get the Order back together" but "show that I am and have always been right to act as nothing more than the sum of my spells, including fleeing and letting people I had agreed to help be butchered in front of me when I was out of spells, and that my spells are in fact the only thing it makes sense to be invested in."

On another note, if anything in the EU casts doubt on the obvious fact that Boba Fett is utterly evil insofar as he has a personality at all, that's another reason I'm glad I never read more of the Star Wars EU books than I did.

(Guy's such a rabid dog that Darth Vader needs to tell him not to disintegrate the person to be captured. I will never understand how anyone took "awesome Neutral-aligned badass" from that.)

Immediately finds a ship that evaded a fleet of Star Destroyers with a space wizard at the helm.

Say what you want about Fett or his methods, but he's immediately established as damned good at finding his quarry.

I believe one of the relatively early authors said "wow, this guy seems like he has a story, I bet it would be really cool to hear it!" and then they went and told that story, and it was in fact cool.

Boba was interesting grounds from an EU perspective in that he was almost completely a blank slate. He was apparently a famous bounty hunter, but he had no other established characteristics, so an author could turn him into just about anything they wanted.

Like I said, V was the only one working on bringing the group together. Eventually, even V tossed that aside. The Order really is nonfunctional (as opposed to dysfunctional) without Roy.

I'm proud, in a weird way, to have never read anything in the EU.

Bounty hunters have always had a big tradition of bringing their quarry in "dead or alive", and "dead" is a lot easier when the quarry resists arrest. It's not necessarily evil to shoot someone who shoots at you.

From what I remember, Boba Fett was actually created for an animated segment of a 1978 Christmas Special :

He was added to the movies after his toys sold so well.

EDIT: Upon further research, the segment was made with the help of a video illustrating Fett's armour, which was already being developed. https://youtu.be/-yF5HFFcv8E

One highly original film with revolutionary effects, followed 3 years later by another with brilliant writing and directing and a cliffhanger ending, were the foundation of the franchise's success. Then marketing made up for the weaknesses in the next four (or five, or six, or seven; YMMV) films.

Note that I'm not throwing stones at doing this. For one thing, that's like half the Tarantino's films right there, and they are still great. For another, the Japanese did the same in the other direction, and that also turned out films that improved on the originals in many ways.

The whole cycle of western->eastern->western retelling on the same basic story beats (see Seven Samurai/Magnificent Seven) but improved in every iteration is the greatest argument against copyright restrictions longer than a handful of years.
