Who do the roaches work for

I'm starting to believe the demon roaches work for another team. My Theory: Tiamat (or maybe the gods of the west as a whole)

Why?

1) They know all the sides, even some that are not yet revealed
2) Jirix's actions (and once the Roach problem was gone, we never see Gobbotopia again)
3) The Oracle was out when Xykon came knocking (while it is true that Tiamat can use god magic to see the future, it might actually be cheaper to just have eyes on the ground tell her stuff like this so she can parley to her other agents)

Who else might the roaches be working for and why?

While I fully expect agents of Tiamat to show up (unless of course the Voices are indeed on her payroll as I like to suspect), I highly doubt that the roaches work for her, and as you pointed out, neither she, nor the Oracle actually needs them.
I would not be surprised to learn that they are in the IFCC's employ. Sabine implied they have pawns planted in every major side to the conflict and within Team Evil they are the only likely candidates for that role.

They're just demonic roaches that like to make fourth wall breaking comments somewhat more often than the rest of the cast. They aren't working for anybody. Occasionally they have a small effect on the story, usually by acting towards the Evil side (telling the MitD to stomp the ground), but that's just due to their sympathy towards Evil.

The Oracle clearly checks on in potential future visitors. It's how he knew to check the Order's credit scores and knew the Belkar would die, among other things he knew before they came. There's no reason to believe he didn't check to see who the next visitor would be himself.

However, if we consider these two points...

When growing up, my mother occasionally wanted to have something put into the garden, which meant digging in North Alabama red clay. Over the years, I broke at least two shovel handles and had a curved steel blade of a spade fold up and bend backward from the stress of trying to break that stuff up.

But my mother always assured me that supervising was the hard part, and that my forcing a shovel into solid clay was the easy part.

I regularly offered to swap jobs with her, but she assured me that supervising was far too hard for me at that age, and so she self-sacrificingly watched me dig.

My mother would not have lied to me, so supervising must be very difficult. (My actual work supervisor does work much harder than I do, so it can be.)

Depends on how good of a supe you intend to be. Being a bad one doesn't take much work, being a good one ... as you've seen, requires more and it's not a linear curve.

If you know how to drink your choice of beverages and whang away at a little ball with a club, then you know how to play golf, as far as I can tell.

My favorite golf story is about my late friend's brother, who hit the ball into the long grass and said, "I need the 10-wood for this shot." Nobody had ever heard of that kind of club. He pulled a Louisville Slugger out of the bag and proceeded to smack the ball back onto the green.

The Demon Roaches are a Greek Chorus: commenting on events while having little to no effect on them. It's common for a Greek Chorus to know more than the main characters, but that doesn't mean it will become a major player in the story. Even if they help MitD stomp the ground, or are used by Miko to light a Molotov Cocktail, or yell when O-Chul prison breaks, they're not relevant as characters.

The Demon Roaches are window dressing, plain and simple, and I don't expect them to become narratively relevant in the slightest.
