Lesser planar binding

If you bind a Barghest, for an extended period of time, and feed it enough for it to grow in HD, does it continue to fulfill the contract? Or does the spell cease to function because the barghest gained its 7th HD

It would still be bound by the contract. The HD restriction in lesser planar binding only affects what creatures you can target with it. Once the spell is cast, the HD of the bound creature doesn't matter.
