Becoming a Rage Animal (non Barbarian)
Are there any PC character types that can can “hulk out” into an animal form? I’m thinking similar to the Hulk, but looking more gorilla ish? Or maybe grizzly type fighting style?

You might also want to look into the semi-official Bloodhunter Order of the Lycan. They get a literal beast mode that you can reskin.

Astral Self Monk's abilities all have the line
"You determine its appearance."
When referring to the 'astral' parts you summon for it, so you could easily just say it's form is incredibly muscular or beastlike

I played a sorcerer who was specialized in nothing except casting polymorph on himself to become a giant ape. That was his whole thing. All his lower level spell slots got melted down to cast polymorph more.
