For my picky dogs, their go to food is my wife's recipe:
brown a pound of ground meat (any is fine)
mix in a bag of frozen peas and carrots
cook one cup uncooked brown rice and mix in
add in a cup of yogurt.
usually feed them a cup to two cups of the mixture per meal. If I'm pulling it out of the fridge I warm it up for a minute in the microwave before serving.
Cost wise, depending on the cost of the meat, it usually comes out to about a dollar a serving.
Sometimes I leave out the yogurt if they start not wanting it for a couple weeks, then add it back in.

I can almost guarantee I eat more fruits and veggies then 90% of the population.
Yesterday I had:
3 cups Asparagus
A can of green beans (7 cups)
10 cups of spinach
3 table spoons of flax
3 apples
5 carrots
10 cups air popped popcorn
Veggies are how you feel full! I just don't eat them with meals, that's what I eat between meals.

I know, that's why I said I didn't list them because they aren't part of meals ;) It's not a big deal, I didn't expect people to comment on my original post so it was rather incomplete. I was making a joke about how bland healthy foods are more then anything.
In case of further inquiries I also eat some of:
Kimchi
Pickles
Kombucha
Sauerkraut
Kefir
On a regular basis for gut health.
Fred meyers, double sized green bean can. I'm also totally wrong, it is 7 1/2 cup servings so 3.5 cups. The popcorn is 10 cups popped, or about 6 table spoons unpopped.
I eat less greenbeans then last year because I eat potatoes with lunch now, which I need for potassium. I also eat a banana before my coffee because I like the jolt of sugar.

A quick breakfast one is 2 eggs whisked with mayo until it emulsifies then if you don't have a stove toss it in a microwave safe bowl for 50 seconds or so. You get a soft egg that is cooked with the mayo making an egg sauce perfect to go on toast.
Put it in a ramekin and you can plop it out as a mini souffle for someone.
For more complicated.
Curry Sauce
2oz Curry Powder
2oz Cumin
1oz Tumeric
1oz paprika
1oz cinnamon
2 Teaspoons of Oregano
3 Large Onions diced
Toss the onions in this after toasting the spices with some salt until they start to soften.
Additional spices can be added including 1 teaspoon of red pepper flakes. An additional ounce of Cumin and/or Curry Powder.
Add
3oz Fish Sauce
2oz Soy Sauce
1 Table Spoon Brown Sugar.
2 Cups of Beef Broth
2oz Rice Wine Vinegar
1 Can of Fire Roasted Tomatoes
Stir in and cook down.
Add salt and pepper to taste.
Blitz it in a blender until it is smooth.
Optional
You can run it through a fine mesh to make it even more smooth.
You can add 2 drops of red food colouring to give it a brighter red colouration.
Serve over rice.

So an extremely cheap and easy recipe I have been using a lot lately:
Dry red lentils
Curry powder.
Cook the red lentils on high until water boils, then reduce to medium for 5-6 minutes. Strain.
Mix in curry powder.
Bam! 700 calories, 46 grams protein, 21 grams fiber, 37% potassium intake and costs about $1. It's also an enormous amount of food, full dinner plate worth cooked.

1 cup dry lentils, they about triple in volume from the water (1 cup dry is about 3 cups cooked.) Some sites say 1=2.5 cups, but I like them mushier then the traditional cooking time. Also the color of lentils matters, red lentils cook really fast and green take 3x as long for the same results.
Another way to put it, dry it is 192 grams. Wet it is 454 grams, or about 60% weight by water.
Also if you don't have to worry about gluten or other contaminants you can get the lentils for $1.50 a lb so it's more like 25C a meal.

Lentils are awesome. My mom used to make lentils in a tomato sauce with some chaurice sausage. Only had it a few times but I remember it being delicious.
Anyway, I should probably contribute a recipe. fish can be kind of expensive, but I have found Salmon dishes have a high tastiness:effort ratio.
Salmon filet
Brush with olive oil
Season with salt, garlic powder, onion powder and pepper (a lot of pepper, practically coat the fish in it)
A little bit of grated cheese on top
Sprinkle on some Italian dressing
Cut a tomato into small pieces and put atop the filet.
From there it’s either the oven or grill at 425 for 12 minutes or until it gets all flaky. Squirt lemon juice on before eating.
Microwave some frozen veggies and make some rice and bang, you have got a delicious meal. Sometimes when I make it for the GF I make risotto instead of rice to be extra fancy but that’s a pain in the butt to be honest.

Something on the more simple side that I've been making lately and loving is Spanish rice. I like how versatile it is.
1 1/2 cup uncooked white rice
2 cups of broth or water
1 onion, diced
4 cloves garlic
22.5 oz tomato sauce
1 tsp chili powder
1 tsp paprika
1/2 tsp cumin
Butter or oil
1 TBSP lime juice
Whatever vegetables you want (I like bell peppers, jalapeño, corn, black beans, tomato, and avocado)
Whatever toppings you like (I usually go for cilantro, cheddar cheese, and the very controversial sour cream)
First, you sauté the onion and garlic in the oil/butter until the onions start looking clear. Then you add the paprika, cumin, and chili powder, and stir them in for about 15 seconds until they're really fragrant. Next, the rice goes in, because I like to toast it a little. Just let it get a little golden. Once the rice is as toasted as you want it, add the tomato sauce and water/broth and stir it in and bring it to a boil. Turn down the heat, cover the pot, and let it simmer for about 20 minutes. Once it's done, stir in the lime juice and vegetables (though I usually put the avocado on the side, because it would just get mushed). Serve yourself up a portion and add the rest of the garnishes.
If you want to be extra fancy, use an oven safe pan and once the vegetables are stirred in, smooth the top of the rice out and sprinkle cheese on it and put it in an oven at 350oF until the cheese is all melted, about 5 minutes.

I'll have to try adding soy sauce and onions to my curry. That recipe looks really good.
For my own contribution: I've recently discovered an amazing chicken marinade. It smells weird when you make it but it tastes excellent (somewhat sweet and forms a nice glaze when grilled). - 1/3 cup Olive Oil
- 3 Tablespoons Lemon Juice
- 3 Tablespoons Soy Sauce
- 2 Tablespoons Balsamic Vinegar
- 1/4 cup Brown Sugar
- 1 Tablespoon Worcestershire Sauce
- 3 Garlic Cloves minced or 1/2 teaspoon Garlic Powder
- 1 1/2 teaspoon Salt
- 1 teaspoon PepperNon caerulea sum, Caerulea nomen meum est.

Boil coconut milk with curry paste
Add a sliced chicken breast (in little bits!)
Wait 10 minutes
Add bits of veggies (courgette, onion...)
Wait 7 minutes
Add egg and maybe a fruit (raspberry or fig goes very well)
Wait 2 minutes
Separately, boil noodles in salted water until they're cooked to the level you like
Put the noodles in the coco-curry-chicken breast-veggies-egg deliciousness after the 2 minutes from the last step
Eat all of it with chopsticks and tell everyone how good it was

Stuffing
2 sticks butter
3/4 cup onion
1 1/2 cup chopped celery
2 tsp salt
1 tsp thyme
1 1/2 tsp sage
1/2 tsp black pepper
~21-23 slices of bread, cubed
