    Default Elder Eidolon

When building a construct like an elder eidolon, is there any restriction on templates? I don't see any, just limiting which types can be used.

I did think, as long as you as creator had knowledge, you could create it?

    Half dragon? Feral? Even paragon?

Raw you can add any template you want but a DM is well within their rights to restrict it to creatures that actually exist.

Yes by RAW you can create an infinite almost stacking template. You see this gryphon is a chimera with 8 different half dragon 🐉 templates stacked onto it for there is lots of chromatic, metallic, and other dragons.

Your DM as a house rule / sanity check should implement a secondary cost where after a certain amount you use CR to determine cost and not HD for you are creating secondary cohorts like leadership.
