You might be able to use a carbonated beverage as part of a brine or marinade when prepping the meat for drying? Maybe if you had a pressurized vessel to keep it from going flat but I don't know what effect, if any, that would have on the meat.

I use braces (also known as "curly brackets") to indicate sarcasm. If there are none present, I probably believe what I am saying; should it turn out to be inaccurate trivia, please tell me rather than trying to play along with an apparent joke I don't know I'm making.

You could try carbonating the jerky in the same way people carbonate fruit? Not sure if it'd work, but worth a shot.
