You might be able to use a carbonated beverage as part of a brine or marinade when prepping the meat for drying? Maybe if you had a pressurized vessel to keep it from going flat but I don't know what effect, if any, that would have on the meat.

Like, would keeping the meat in something bubbly while it's brining/marinating have an effect on the final product? I'm gonna be thinking about that all night now.

You could try carbonating the jerky in the same way people carbonate fruit? Not sure if it'd work, but worth a shot.

I've had Dr. Pepper jerky before. It was pretty good.
