Pet spells, feats or skills.
What things do you use often despite thier flaws.
1) Summon monster spells as a wizard, I just like them as they have many uses.
2) Appraise: It seems to me to give a sort of education to a character.
3) Skill focus: I find it incredibly hard to make a character without it as I like skills.

Monks, what can I say? I just like a challenge, so long as the rest of the players know in advance it's useually cool with them.
Give them bread and circusses and the plebs wont rise against you. Give adventurers dungeons and trapped chests and they won't waste time looking to ransack your home and kill your wife.

Improved Unarmed Strike and possibly Versatile Unarmed Strike. While effectively quite useless, they give a sense of security...
