I believe the etymology goes something like:

French Fries: Comes from the term French cut. Also known as Julienning or allumette.
Chips: From frying "chips" of potato.

Random trivia: Apparently New Zealand uses chips to mean both the US and Commonwealth definitions, but uses "hot chips" and "cold chips" when the distinction isn't obvious.

But... both are served hot...
