Well toss a glass of water onto the concrete and you can see the steam forming over the puddle in seconds it takes to disappear...as in under a minute. And to see the vapor formation you mostly needed a good backdrop more than anything.
Watching water dry was an actual pastime in my childhood because we are talking about a retreat of 1-3cm/sec of the edge of the puddle when you get into the really hot and dry days. (also watching tourists try to clean their windows in a gas station could be really funny)
